
25 Jul Chicken Lentil Bone Broth Soup
CHICKEN LENTIL BONE BROTH SOUP
I LOVE a good, hearty soup. Especially if that soup is full of collagen peptides, which are great for your skin, hair, nails, bones, and joints. It’s actually a “beauty soup.” Hooray! I make a giant pot of this soup at a time, and then freeze portions of it to heat up after I return home from traveling or if I’m feeling like my skin (or body) needs a pick-me-up.
INGREDIENTS:
2 tablespoons olive oil
1 cup chopped white onion
1 cup chopped carrots
1 cup chopped celery
2 bay leaves
1 bag dried lentils (I use green lentils), rinsed and drained
2-3 cups leftover chicken breast (You can also use raw chicken if you don’t have leftovers)
3 bags Bonefide organic chicken bone broth
1 box organic chicken stock
Salt and pepper to taste
PREPARATION:
*Heat oil in large stock pot.
*Sauté onion, carrots, and celery 5 minutes or until they begin to soften.
*Add 2 dried bay leaves and sauté a few more minutes.
*Add 1 bag of well rinsed lentils.
*Add 2-3 cups chopped chicken.
*Add 3 bags Bonefide organic chicken bone broth (thawed) and 1 box chicken stock.
*Bring to a boil, then simmer 45 minutes with tilted lid until lentils are soft.
*Salt and pepper to taste.
So there you have it! A healthy, hearty, beauty soup that will get you feeling your best on the inside, and looking your best on the outside. That’s a win-win, folks!
