My Favorite Kale Salad
I love Kale! It’s a superfood that is loaded with powerful health benefits. It’s a great source of vitamins A, vitamin C, vitamin K, and magnesium, as well as calcium, copper, potassium, and B6. And it’s packed with fiber, which fills you up and keeps your digestive track healthy. Hooray!
INGREDIENTS:
2 bunches Kale (devein by separating the leaves from the stems)
Juice of 1 lemon
1/4 cup extra virgin olive oil
Salt and pepper to taste
1/2 cup halved grape tomatoes
1/2 cup toasted almond slivers
1/4 cup grated parmesan cheese (or vegan parmesan cheese)
PREPARATION:
*Slice kale into thin ribbons.
*Place kale into a bowl.
*Squeeze the juice of 1 lemon over the kale.
*Massage kale for 3-4 minutes.
*Add ¼ cup of extra virgin olive oil.
*Continue to massage the kale.
*Let kale sit for 2-3 minutes.
*Drain liquid over a strainer and continue to massage.
*Add salt & pepper.
*Toss additional ingredients together and serve.
Additions: (Optional)
– Add ½ cup of sliced tomatoes (this adds a splash of bright red color)
– Add ¼ cup toasted almonds (my fav for adding crunchy texture)
– Add Parmesan Cheese (a game-changer)

So there you have it – a simple kale salad that pairs well with any entree can be the stand-alone powerhouse salad, or is an amazing main dish when topped with your favorite grilled lean protein. So versatile. So healthy. So delicious!
