Summer is just around the corner, and BBQs will be firing up across the country. Most of the foods people traditionally like to cook (hot dogs, hamburgers, & ribs) are not very good for you. Even barbecued chicken and grilled veggies are now questionable – if they are charred – which is, of course, almost inevitable on the open flame. Uggh! Those delicious (and desired, until now) blackened bits of goodness obtained by grilling have been linked to cancer-causing agents. So, I was on a mission this week to find a way to cook the healthiest of foods… on the grill, without the charring. In the time it takes you to grill a nitrate-laden hot dog, you can have a char-free, healthy piece of omega 3- rich salmon. And, if others in your family still want traditional barbecue fare, you can cook the ribs, chicken, hot dogs and hamburgers side-by-side with this piece of fish. Hooray!
PREPARATION: *Preheat grill to high. *Place salmon filet, skin side down, in the middle of a piece of aluminum foil. *Squeeze fresh lemon on salmon. *Sprinkle with freshly chopped dill and freshly ground black pepper. Top with 3 lemon slices. *Roll up the sides of the foil and close it around the salmon. Place the foil-wrapped packet on the hot grill. *Close barbecue lid, turn heat down to medium high, and cook (without turning) for 10 minutes. *Remove from grill and serve in the foil with additional lemon wedges.
This recipe is so fresh and easy. It just screams summer! And, because you are cooking this dish in the foil wrapper, there is no need for that nasty task of scraping the barbecue grill. Healthy eating and easy clean-up? Now that, my friends, is a really good way to Live Young.
