Pulled BBQ Chicken Sandwich
I’m always looking for a healthy alternative to some of my favorite dishes. I LOVE a pulled pork sandwich on a fluffy white bun to soak up all the juice, but let’s just be honest, it isn’t the best thing for your health (or your thighs). This pulled BBQ chicken sandwich, however, won’t sabotage your waistline, even though it tastes like it should. One of the best things about this recipe is that it is made in a slow-cooker, so there is minimal time in the kitchen. I like to top each with homemade coleslaw and a dill pickle. Want to save on the carbs? Eat it open faced without the top bun.
(Serves 6)
INGREDIENTS:
6 boneless, skinless chicken breasts
1 bottle of your favorite (no sugar added) BBQ sauce, or make your own.
6 whole grain hamburger buns
Coleslaw (optional)
Dill pickle chips (optional)
PROCEDURE:
*Place the 6 chicken breasts in slow-cooker.
*Pour an entire bottle of your favorite BBQ sauce on top and stir.
*Cook on high for 4 hours or low for 6 hours.
*Remove from slow cooker and shred with a fork.
*Return shredded chicken back to the slow-cooker and stir.
*Spoon on to hamburger buns, top with coleslaw and a dill pickle.
That’s really all there is to it. There is always a ton of hidden sugar in sauces, and BBQ sauce is one of the worst. If you can’t find a “no sugar added” BBQ sauce, then consider making your own.
