Individual Mixed Berry Crumble

Individual Berry Cobler- Live Young LifestyleIt’s difficult to find a dessert that is truly healthy. Trust me. Having grown up one of a family of five sweet-toothed kids, and now parenting four equally sugar-craving kids between 16 and 20, I’ve been experimenting with “healthy” dessert recipes for a long time. And in my quest, I think I’ve struck gold with this one. Eureka! This Mixed Berry Crumble is full of antioxidants, good fats, and fiber. And the kids loved it. Hooray!

(makes 6 individual servings)
INGREDIENTS: 
Nonstick cooking spray
3 cups each: blueberries, raspberries, and boysenberries
3 tablespoons Arrowroot starch
1 cup plus 3 tablespoons coconut sugar
1 cup almond flour
1 cup rolled oats
1/4 cup chia seeds
1/4 cup ground flax seeds
3/4 cup room temperature coconut oil
1/4 teaspoon salt
Vanilla coconut-milk ice cream, for serving (optional)

PROCEDURE: 
*Preheat the oven to 375°.
*Lightly coat six 8-ounce, oven-safe soufflé dishes, and place on a rimmed baking sheet.
*In a large bowl, toss berries with 3 tablespoons Arrowroot starch and 3 tablespoons coconut sugar.
*Let stand about 10 minutes, until juicy.
*While the berries sit, combine almond flour, oats, 1 cup coconut sugar, flax seed, chia seeds and salt.
*Cut in the coconut oil, using a fork or pastry cutter, until the mixture begins to stick together into crumbs.
*Divide the berries into the soufflé dishes and sprinkle with the topping.
*Bake 40 minutes until the top is golden brown and the berries are bubbling.
*Serve warm, or at room temperature, with vanilla “ice-cream” if desired.

So there you have it. A Mixed Berry Crumble that is actually healthy. Pop this in the oven while you fire up the barbecue. By the time dinner is grilled, you have a gorgeous dessert that is a real crowd pleaser. Even for those sweet-toothed, dessert fiends.
