Flourless Chocolate Cake – Yum!
Every time I turn around I’m reading how chocolate has major health benefits. It turns out that chocolate (especially dark chocolate) reduces body mass, may ward off cancer, prevents blood clots, and ….
(drum roll please)… can help you stay thin. Hooray!
The problem is that most of us don’t eat bitter enough chocolate to reap all of its health benefits. Furthermore, most chocolate is sweetened with sugar, which as we now know is the root of all evil in your pantry. Uggh. So, I went on a search for the best chocolate cake recipe that was really healthy. (Seems like an oxymoron, I know.) And after some trial and error and a few tweaks here and there, here’s what I came up with – yummy chocolate cake that is so rich, no one would ever know it was actually good for you!
(Serves 16)
INGREDIENTS:
4 oz. unsweetened, organic baking chocolate
1/2 cup coconut oil, plus 1 tablespoon
3 eggs
1/2 cup unsweetened mashed dates
(Mash dates in a food processor with a tiny bit of water until they become the consistency of honey).
1/4 cup raw, organic honey
1/4 cup cocoa powder
PREPARATION:
*Preheat oven to 375°
*Grease an 8″ spring-form pan with 1 tablespoon coconut oil.
*Break chocolate into small pieces.
*In microwave-safe bowl, heat 1/2 cup coconut oil and chocolate pieces until melted (about 40 seconds).
*Remove from microwave, whisk, and heat longer if needed. Stir until thoroughly melted.
*Add dates, honey, cocoa powder, and eggs to the mixture, and whisk until smooth.
*Pour batter into greased pan.
*Bake for 20-25 minutes until the center looks slightly firm.
*Allow to cool for 20 minutes before removing the spring-form pan.

This cake is so rich that a little piece goes a long way. Even so, it disappears quickly in a house full of teenagers looking to tame their chocolate cravings! A cake this delicious AND healthy?… Now that’s a really good way to live young!
